INGREDIENTS
- 1 egg yolk
- 25 ounces of peanut oil or sunflower
- 1/2 Coffee mustard
- 1 Coffee wine vinegar
- salt and pepper
- a drummer or biceps and a fork or whisk!
DIRECTION
- In a bowl large enough, mix the egg yolk and mustard until smooth.
- Then incorporates a trickle of oil (just a few drops) still strongly turning in the same direction with a fork or fouet.
- Continue then pour the oil slowly, always in a thin, rotating between each addition .
- When the mayonnaise begins to set, pour the remaining oil, stirring continuously.
- For a successful mayonnaise, eggs come out of the refrigerator at least 1 hour before.

- Once the mayonnaise made, it should be firm.
