VEGETABLE CURRY

INGREDIENTS (for 4 people)
  • 1 zucchini (300g)
  • 200gm chickpeas
  • 200gm frozen cauliflower
  • 150gm frozen spinach branches
  • 20gm curry paste
  • 1CS oil
  • 20ml tomato coulis
  • 25gm lemon juice
  • 10 ml of water
  • 1 teaspoon sugar
 
DIRECTION
  • Peel the zucchini and cut into pieces.
  • Drain the chickpeas.
  • Heat oil in a large pan and fry the curry paste for 1 min. Add zucchini and cauliflower.
  • Bake for 15 min.
  • Pour the tomato sauce, water and spinach. Bake for 15 min. Add the chickpeas and cook for another 15 minutes, covered.
  • Serve with or without rice.
