INGREDIENTS (for 4 people)
- 1 zucchini (300g)
- 200gm chickpeas
- 200gm frozen cauliflower
- 150gm frozen spinach branches
- 20gm curry paste
- 1CS oil
- 20ml tomato coulis
- 25gm lemon juice
- 10 ml of water
- 1 teaspoon sugar
DIRECTION
- Peel the zucchini and cut into pieces.
- Drain the chickpeas.
- Heat oil in a large pan and fry the curry paste for 1 min. Add zucchini and cauliflower.
- Bake for 15 min.
- Pour the tomato sauce, water and spinach. Bake for 15 min. Add the chickpeas and cook for another 15 minutes, covered.
- Serve with or without rice.
