THE POLPETTES


FOR A DOZEN POLPETTES
INGREDIENTS
  • 600g of ground beef
  • 34 eggs
  • 120 gm of grated parmesan
  • Salt and pepper
  • 80 gm breadcrumbs
  • mozarella
  • Tomatoes (to accompany)


DIRECTION
  • Mix in a bowl 3 eggs and meat.
  • Knead by hand to mix well, add salt and pepper.
  • Gradually mix in the breadcrumbs to obtain a homogeneous dough and not enough "liquid".
  • Add to the mix the grated parmesan.
  • If mixture is too hard, add the fourth egg.
  • Form a dozen medium sized meatballs.
  • Fry in a pan and olive oil for about ten minutes.
  • Place the mozzarella and a slice of tomato on top of meatballs.
