FOR A DOZEN POLPETTES
INGREDIENTS
- 600g of ground beef
- 34 eggs
- 120 gm of grated parmesan
- Salt and pepper
- 80 gm breadcrumbs
- mozarella
- Tomatoes (to accompany)
DIRECTION
- Mix in a bowl 3 eggs and meat.
- Knead by hand to mix well, add salt and pepper.
- Gradually mix in the breadcrumbs to obtain a homogeneous dough and not enough "liquid".
- Add to the mix the grated parmesan.
- If mixture is too hard, add the fourth egg.
- Form a dozen medium sized meatballs.
- Fry in a pan and olive oil for about ten minutes.
- Place the mozzarella and a slice of tomato on top of meatballs.
