BABY VEGETABLES
INGREDIENTS (serves 6)
- 12 small potatoes, peeled
- 1 bunch baby (Dutch) carrots, scrubbed
- 3 baby fennel, trimmed and quartered
- 1/2 small cauliflower, cut into florets
- 6 baby leeks (or 2 regular leeks, quartered)
- 150g snow peas
- 2 bunches baby beetroot (or 1 bunch regular
beetroot, quartered)
DIRECTION
- Take a large pan and
place the potatoes in it. Cover it with salted water and place it on the heat.
Bring it to boil.
- Simmer for 5 minutes
over the medium heat.
- Add carrots,
cauliflower and fennel in it and again cook for 3 minutes.
- Now add leeks in it and
cook for another 3 minutes.
- Now add snow peas in it
and cook for another minutes or until all the vegetables are tender.
- In the meanwhile, take
another bowl and cook the beetroot in the salted water for 10 to 12 minutes or
until tender.
- When done cool them and
peel them.
- Serve the vegetables
with the corned beef.
