INGREDIENTS
- 600g Desiree potatoes, washed, cut into chips
- 2 tablespoons olive oil
- 4 (150g each) beef sirloin steaks
- 1 cup beef stock
- 1/3 cup tomato sauce
- 2 garlic cloves, crushed
- 80g mixed salad leaves
DIRECTION
- Preheat oven to 200ºC/180ºC fan-forced.
- Place potato and half the oil in a large bowl.
- Season with salt and pepper. Toss to combine.
- Place, in a single layer, on a baking tray.
- Bake for 25 to 30 minutes or until golden and tender.
- Drizzle steaks with remaining oil. Season with salt and pepper.
- Heat a large frying pan over medium-high heat.
- Cook steaks for 4 to 5 minutes each side for medium or until cooked to your liking.
- Transfer to a plate. Cover. Set aside for 5 minutes.
- Add stock, sauce and garlic to pan.
- Cook, stirring for 8 minutes or until sauce has thickened.
- Serve steaks with sauce, chips and salad.
