INGREDIENTS
- A roll of cookie dough
- A pineapple
- 1 lime untreated
- 130 g of grated coconut
- 1 can sweetened condensed milk (400g)
- 2 c. brown sugar
- 3 egg yolks
DIRECTION
- Preheat oven to 200 °
- Peel the pineapple and cut into thin slices.
- Line a pie plate with pastry keeping the parchment underneath.
- Bake blind the pastry in the oven 15 minutes.
- Combine sweetened condensed milk, juice and grated zest of lime, 120g grated coconut and egg yolks.
- Spread over baked pie shell.
- Bake 25 minutes in the oven.
- Arrange on top of the pineapple slices and sprinkle with brown sugar rose.
- Brown for a few minutes under the broiler.
- Serve warm or cold, sprinkled with the remaining grated coconut.
