BABY BOK CHOY WITH CASHEWS



INGREDIENTS

  • 2 tablespoon olive oil
  • 1 cup chopped green onions, including green ends
  • 3 cloves garlic, chopped
  • 1 pound baby bok choy, rinsed, larger leaves separated from base, base trimmed but still present, holding the smaller leaves together
  • 1/2 teaspoon dark sesame oil
  • Salt
  • 1/2 cup chopped, roasted, salted cashews
 

DIRECTION

  • Take a large sauté pan and heat oil in it.
  • Add onion to it and garlic and bok choy in it.
  • Add salt and sesame oil in it.
  • Cover it with lid and leave it for 3 minutes or until bok choy is cooked.
  • Remove the cover when done and lower the heat.
  • Stir and cook for another 1 or 2 minutes until bok choy are fully cooked.
  • Mix the cashews in it and serve.
