BABY BOK CHOY WITH CASHEWS
INGREDIENTS
- 2 tablespoon olive oil
- 1 cup chopped green onions, including green ends
- 3 cloves garlic, chopped
- 1 pound baby bok choy, rinsed, larger leaves
separated from base, base trimmed but still present, holding the smaller leaves
together
- 1/2 teaspoon dark sesame oil
- Salt
- 1/2 cup chopped, roasted, salted cashews
DIRECTION
- Take a large sauté pan
and heat oil in it.
- Add onion to it and
garlic and bok choy in it.
- Add salt and sesame oil
in it.
- Cover it with lid and
leave it for 3 minutes or until bok choy is cooked.
- Remove the cover when
done and lower the heat.
- Stir and cook for
another 1 or 2 minutes until bok choy are fully cooked.
- Mix the cashews in it
and serve.
